Celebrating ripening as beautiful imperfections, these coffee seeds are pulped from their skin and rested in their own sugars. With the passing of time and contact with land, they become graced with an aerial development as righteous as a flamboyance of flamingos.
You've likely heard us talk about Edgar Cosigua from San Jeronimo, one of the hardest workers we know! He works with the team to plan drying schedules, processing strategy, quality control, container preparation, and plays a huge role in the execution of our fermentation experiments. Edgar has been working with the Bressani family for 20 years and has a couple of smaller farms he owns as well. This coffee comes from Finca San Jorge and is honey processed, leaving the sticky mucilage on the pulped coffee to increase fermentation levels producing a juicy, sweet cup. The Sarchimor cultivar is a cross between Villa Sarchi and Timor hybrid coffee plants, creating a tree with strong disease resistance from the Timor lineage, paired with the elegant cup profile of Villa Sarchi.
