For this blend, we are working with two different beans that have been decaffeinated, starting with the water-processed Colombian decaf you are all familiar with, showing notes of dried fruit and brown sugar in the cup. We paired this with a Mexican decaf that also undergoes what is a different process for decaffeination, using a naturally occurring compound found in many fruits, vegetables, and is a byproduct of sugar cane production - ethyl acetate, or EA. You may have started to see this type of decaf popping up as "sugar cane decaf."
