In true SJM fashion, they are excited to get nerdy and explore grafting, from seed, hybrids, etc. producing a sustainable yield of high-quality cacao.

The cacao grown and used for this chocolate bar is what they call a "Criollo Rosado", referring to the light colored, more pink color of the interior of the cacao beans freshly sliced open, not yet fermented. This chocolate bar won a silver in the international chocolate awards. - Artwork by MATR
