Sleep Walk Criollo Rosado Bar

In true SJM fashion, they are excited to get nerdy and explore grafting, from seed, hybrids, and such, to produce a sustainable yield of high-quality cacao. The cacao grown and used for this chocolate bar is what they call a "Criollo Rosado", referring to the light colored, more pink color of the interior of the cacao beans freshly sliced open, not yet fermented. After the pods are harvested from the trees, split open, and the beans and pulp inside are scooped into wooden boxes lined with banana leaves to ferment. While cacao harvesting and processing is a very new project for the team at FSJM, we've been impressed with the resulting chocolate right away, and we're not the only ones - this bar won a silver medal in the International Chocolate Awards - Americas!
