Celebrating ripening as beautiful imperfections, these coffee seeds are pulped from their skin and rested in their own sugars. With the passing of time and contact with land, they become graced with an aerial development as righteous as a flamboyance of flamingos.


The crew at Finca San Jeronimo's mill has been working year after year to improve upon the cup quality of their honeys, and it definitely shows with this coffee! They often refer to this honey process as "slow jam," with the jammy sweet mucilage left on the beans slowly fermenting and drying on the beans' parchment layer, resembling cracker jacks. This process uses minimal water to keep as much of that sweet, sticky pulp on the beans to ferment. Allowing the beans to be in contact with the fermenting mucilage brings out more acidity in the cup with balanced sweetness and creates a fuller body in the cup!
