Sleep Walk Revolution Brewing D.B.X.O.D. Le Tronçais Barrel Aged Bar

 We aged this Mexican cacao in French Oak barrels from Revolution Brewing that previously aged their D.B.X.O.D. Le Tronçais, infusing the raw cacao beans with the unique characteristics of the beer and the wood itself. We sourced this cacao from the Broca Family near Cunduacan, Tabasco in Mexico. These pods from the cacao trees are split open to remove the beans and mucilage from the inside, which is loaded into large wooden boxes to ferment and is turned every day or two over the course of 6-7 days. After the cacao is sundried on patios for about 5 days, it is ready to be prepared for shipping to Chicago. This process gives the cacao a fruity acidity that lends itself well to barrel aging, layering in more complexity as it aged in 16 months in these Revolution Brewing Le Tronçais barrels!
