Embracing realms of influence and experience, we have transformed our collective curiosity and abandoned conventional practices of coffee fermentation. This shamanic jaguar blazes our path forward in action, but one cannot progress these ideas without fueling the fire of psychedelegance.
For this experiment: We brought the crew from Revolution Brewing down to Finca San Jeronimo with us, along with Nelson Sauvin hops and Champagne yeast. Using these components to almost brew a beer for the coffee to ferment in! We utilized Manchamé for this experiment, a cross between Catimor and Pacamara, which is a high-yielding and rust-resistant genetic that is becoming more widely cultivated at Finca San Jeronimo Miramar.
