The Pacas cultivar is a well-known entity among the DMC faithful, making appearances in a multitude of blends and always standing strong on its own as a single origin. For the uninitiated, Pacas is a natural mutation of Bourbon that was discovered by the Pacas family 70+ years ago and is a sturdy, high-yielding tree. These bad boys have gone through a natural fermentation process: After being picked and classified at the mill, the cherries are dried on shaded raised beds to provide a stable environment during fermentation. With the skin intact the mucilage inside, surrounding the coffee bean breaks down during the fermentation to produce a juicy, fruit-forward cup of coffee with notes of Date, Raspberry, and Dried Apricot.
