Santa Petrona Pacamara Natural (Single Origin)


Have you ever tasted something so delicious only to be told that's all you get? One taste, one chance to see how delicious something is, then it's gone...These two Pacamara coffees were the culprits of such frustration for the last six years, but that all has changed. 

Pacamara is a genetic that is a hybrid of Pacas and Maragogype. Pacas is a dwarf genetic of bourbon that Federico's family discovered in the 1940's and Maragogype is a natural mutation of Typica.  With a relatively high rate of reverting to Pacas, this coffee can be a challenge to cultivate, however Federico has done a  great job forming a strong and healthy population of Pacamaras. The natural process on this coffee allows the seed to be in direct contact with the mucilage and sugars within the cherry for an extended period of time. This brings out a nice balance of acidity and sweetness in the cup and this Pacamara is a great representation of this processing method with tons of brightness and berry notes.
