Willett Distillery is a family-owned, fifth-generation producer of Bourbon located in Bardstown, Kentucky, where it has been distilling for over 90 years on the property built on the family farm. Their Bourbon has caramel, vanilla, and baking spice notes, with a balanced oak profile from the charred, new American oak barrels it is aged in. After the spirit has aged in these barrels, the wood has soaked up liquid and taken on the booziness of the Bourbon, perfect for aging coffee! We filled these Willett barrels with a washed Guatemalan coffee from the volcanic soil near Lake Atitlan, allowing this raw coffee to take on the character of the spirit and the wood before roasting. We roast up this coffee in small batches on our Sivetz air roaster to highlight the complexity imparted by the barrel, caramelizing the beans to bring out sweetness.
