Dark Matter Coffee's 15th Anniversary Blend!
This year's anniversary blend is a send-up to those that helped make us. We've been working with the Pacas and Bressani families for years, and we owe a lot of our success to their hard work producing the beautiful coffees we get to share with you all. Naturally, for the 15th anniversary, we wanted to pair together some of our favorite coffees from both of these producers to create a greatest-hits blend.
First up is a Catuai from Finca San Jeronimo Miramar. We're extremely familiar with this cultivar as it's the base of our fermentation experiments, Love Supreme, and plenty of other blends around DMC. Catuai makes up the majority of coffee on the farm and thus it's a shining example of what FSJM has to offer.
Next is a honey Pacas from Vista Hermosa. Over the last decade, we've seen these plants grow from sprouts in the nursery to the mighty producers they are today. The Pacas genetic (a mutation of bourbon) was discovered by the Pacas family over 70 years ago, so it makes sense that we highlight the coffee that takes our partners' namesake.
Blending these two together, the Catuai offers up a nice rich base, providing ample room for the honey Pacas to add mild acidity and sweetness. We housed the whole thing in a bag from Jason Brammer, whose art and murals are forever woven into the fabric of our cafes.
