The base coffees feature a newer cultivar to our lineup, honey-processed Manchamé, released as a single origin earlier this year. A natural mutation of Catimor and Pacamara it was discovered by Francisco Manchamé in the 80s, becoming widely available to producers in 2014. We love its stone fruit and sweetness, a great pair for the wildness of the Malört conditioned Catuai.
For the Malört conditioned component, we took a washed processed Catuai from Guatemala and infused the green coffee beans with this herbal, citrus-forward liquor now made at CH Distillery. Despite its reputation, the bitters are tamed after the roasting process, resulting in a bright and complex bouquet of aromatics used in the creation of Malört. Sliding in for balance is a washed Caturra, with a natural fudgy and vanilla-forward profile.
