Allow us to introduce you to the granddaddy of all Pacas. This Pacas, grown on the mountainside of Santa Petrona is a DMC gem. The Pacas family discovered this natural mutation derived from Bourbon genetics and bestowed the family name onto this glorious shrub.
This bean perfectly represents why El Salvador is a pioneering country for coffee excellence. This specific lot you will drink is the beginning of it all - one of the first Pacas crops in the history of the world. We have it. That's right, we are among the very, very few who are lucky enough to try this cultivar, at this age, EVER!
This coffee has a classic Salvadoran profile with loads of sweetness and a hint of acidity. We found this year's lot to have a cherry cola or candy fruit note to the cup with a nutty and chocolate finish.
