Pacas Viejo is grown on the mountainside of Santa Petrona, and is a DMC favorite. The Pacas family discovered this natural mutation derived from Bourbon genetics and bestowed the family name onto this glorious shrub.This specific lot is one of the first Pacas crops in the history of the world!
It is an ideal tree for cultivation because of it's high yield of cherries, structural wind resistance, and is slightly higher in disease resistance than its parental genetic, Bourbon. Coffee trees are prolific in their early years, with older trees producing lower yields. The results are coffee cherries with more pronounced flavor profiles, a rounding of the acidity and increased sugar content. This bean is a a perfect representation of why El Salvador is a pioneering country for coffee excellence.
