Goose Island Gillian Barrel Aged Gema


Goose Island's Gillian is a Belgian-style farmhouse ale, or saison that is brewed with strawberries and aged in Cabernet wine barrels. This ale has both wild Brettanomyces yeast and champagne yeast for a different approach to making a saison. The addition of the wild yeast transforms this from a regular saison into more of a hybrid saison sour.  But this isn't the only unique twist that Goose Island uses to create Gillian; the Cabernet barrels are actually scrubbed clean prior to the aging process. This additional step allows for the characteristics of the original oak barrel to permeate in the ale, vs acquiring more of the characteristics of the wine. 

Lessening the wine characteristics of the barrel was a perfect fit for the inherent acidic notes of our pulped natural coffee. This is a delectable and harmonic cup of tart, sweet and a touch of spice. If you appreciate the complexity of sour beers, then this coffee should be one to remember.
